Can you extend player contracts during the season?

As far as I know, there is no way to re-sign any player during the season. I have never understood why that is the case. Everything else in Association mode is pretty accurate, except for that.

you need to get your player's moral up high enough and they will re-sgn with you if it is a 1 year contract

Yes you can. Once they are on their last year and are happy with how you're running the team and are comfortable being on your team, you will get a sign choice when you select the player before the deadline. Their comment would also say something like "Let's sign an extension right away."
However, the problem in your case is that Carmelo has no interest.

He also has a player option for next year so I wonder if this affects it. I haven't played any games with him yet, though.
