You have to do it once you start now. It's in the coach positions section. You can't change appearance anymore...after I thought about that for a second, that's because you never see the coaches because they're not on the sidelines anymore.

Alright, thanks. I guess I just have to live with "<enter school name here> COACH" for all other 119 teams.
