I tried, re-loading the roster. I tried restarting the game. I tried downloading the offline roster from last year. All of them had the same result for me. The default playbook are chosen at the play now screen and in dynasty.

But I can see what is the right playbook if I go to edit coaches.

It maybe because of your profile how you have your favorite team setup. Look there

I have the playbook set to team specific. Isn't that what it's supposed to be on?
