Good stuff for the not-so-skilled players!
Well, if you're a little underskilled at this game (okay, not just "a little"), it might be worth your while to just go with varsity at default with maybe some slight adjustments as you improve. I'd been playing with them in "play now" and having competitive games, but I finally decided to try the one-star to five-star challenge using SMU and was really happy with many of the results, based on a comparison to what happened in the actual, real-life game (which I had watched, by the way)

SMU 31 (The score is really the main issue I had with the 'reality' thing, as Tech won 49-9, but that's because of the only other really obscene incongruity with the real game.

TTU 3 (in reality, SMU had 3 and Texas Tech 0)
Some other samples I was happy to see (with real-life results in parentheses):
First downs: SMU 16 - TTU 26 (15-30)
Total Offense: 291-460 (270-553)
Passing yards: 178-361 (155-473)
Justin Willis: 16-21 for 182 and 3 INT (15-33 for 138 and 2 INT)
Columbus Givens (WR): 3-36 (2-27)
Vincent Chase (WR): 2-27 (2-27!)
Graham Harrell: 31-43 for 361 (44-59 for 419)
Shannon Woods (RB): 10-46 (10-45!)
Michael Crabtree (WR): 8-108 (12-106!)
Shannon Woods (WR): 4-11 (6-11)
I simply like it when they come close like that.
Again, I struggle with this game against skilled players, so this wouldn't really happen for most players, but I thought it was worth noting in case lesser-skilled players are too worried about having the right sliders. Just try Varsity on default and see what happens. You might get a nice surprise.
