What are the best CPU vs. CPU sliders out there? Also, how about coach vs. coach?

Bud, there are many slider sets out there but slider sets are not universal for everyone. If I were you, I would play around with multiple sets, remember however, it is not possible to gauge a slider set after one game. If you are looking for coaching or CPU vs CPU sliders, try to stay with sets specifically designed for that purpose.
