I think I am going to do something similar to Nivek.

ACC - North Carolina
Big 10 - Ohio State
Pac 10 - Arizona
SEC - South Carolina
Big 12 - Texas A&M
Big East - Connecticut

What style of offense will you all use? What will be your base defense?

I'll use a multi team dynasty consisting of Bowling Green (MAC), Utah (Mountain West), and Temple. I plan on basing my entire offensive attack from the shotgun just as these teams do in real life. My defensive system will be a mix of the 4-2-5 and 3-3-5.
