I'm wondering if this isn't an issue with the game clock. That is, I'd like to play through a couple games at 15-minute quarters and see what kinda of TOP numbers I can get before I'll say this is an issue. All these guys are playing 5-minute quarters, that might be the cause of this.

I don't see it as a problem at all it sucks but its not a problem. I do this online now I run my plays the moment I get to the line so my opponent can't hot route his entire defense.

For me, quick snap is only an issue early in the game. After I have the game a week I can make all of my defensive adjustments in a matter of 1-2 seconds.

Well if EA adds a feature of defensive adjustments then we can't even use it playing the CPU...that's a problem. Also we are not talking about hot routing entire defenses as been noted many times already.
Lastly they (EA) added pre snap movements by the D players that happen automatically that we don't control. (Disguising coverages etc..) Again this is eliminated when playing the CPU. It is an issue to a lot or people..

Yep we'll have a couple seconds which is cool. Still don't think it will be enough for the auto d movement to kick in but I can live with that vs cpu. We'll see it vs humans though. Well most humans anyways.

I always wait until the offense picks its play before I pick mine, BUT if Def Audibles are in the game and they call it "New" feature they should at least let us use them. That is like saying NCAA 10 with new dynamic catching but then saying the QB cant throw? Makes the feature useless and makes no sense. But I guess we will have to live with about 3 sec.

I can see it sucking when it comes to the cpu being ahead and not having the wits to kill the clock. But again I've seen to many people spend way to much time moving this guy here and that guy there. I say pick the play and run it. Understandable to want to pinch your line or call bump-N-Run. Anything else is taking advantage IMO. The cpu does not have the knowledge to block all the crazy schemes a human can create by moving his players around.

If there is enough time to atleast shift your D-line,LB's and choose your coverage there should be no problem. The cpu being up late in the game would be my only concern.
