Mad thanks go to Bumble, Gillionaire and Tomba! I reduced the resolution to 720 and it looks great! Graininess be gone!
I just assumed having it set to 1080 wouldn't matter and the screen would have gone blank if it wasn't compatible. On a side note, from day one, I thought it was weird that all of the PS3 side options (like shutting down console, loading files) were bigger than normal while NCAA was playing. I thought it was just the way EA's game worked with the system. I was wrong, it was obviously related to having it set to 1080.
Funny thing was, I almost tried reducing the resolution last week, but got sidetracked before work. Again, thanks for pushing me to the answer.
