I think about this when playing Madden as well in a way, but also think this may be too much to ask for in a video game. Not like other more simple aspects of the game are perfect, so find it hard to believe they would ever get to changing ratings if you put players in a different defense.

I think the initial reason for ratings drops from position to position was in an attempt to keep people from exploiting the positions. However, it kind of defeats the purpose. God forbid I want to convert a "Blocking TE" to a FB and keep his Blocking rate and speed.
