There are very, very good ways of doing DLC. For instance, look at what Criterion's done with Burnout Paradise. They added motorcycles to the game for free. And I just bought Big Surf Island and couldn't be happier with it.

Bethesda's also done a great job for the most part. They've charged extra for good added content.

What EA is doing with NCAA this year, though, is less than admirable. It's to the point where I wouldn't be surprised if they charged 200 MS points to download the eventual patch. Now obviously I don't think that will actually happen, because they've been smart in finding clever ways to charge for content and charging for a patch would be very clumsy, but I don't think it's completely outside the realm of possibility for them now.

Who has the time to create 100+ CAS teams?!

I don't have a problem with them charging for 120 slots if it's reasonably priced. most people have no need for that many slots anyway. I understand how some people could look at it as being nickel and dimed, but look at it this way how many sports games allow you create an infinite number of teams? and how many let you have 120 stored on your system?

If I'm not mistaken, I believe the cost is determined by M$ & Sony, not EA. I'm sure EA knows the cost, but when everyone decides to flame on that, make sure you're flaming the right people.
