This was very useful on Madden 10, as you didn't have to pause every game and make the subs.. I know they put in formation subs but does anybody know if EA has said anything about saving depth charts for online play?

Probably not for your online exhibition games. I doubt it would be saved to your profile like that. However, it will be saved if you're playing in an online dynasty. The depth chart and formation subs will be correct every week just like you set them.
