the truck stick is no longer a truck stick it is used for leaning, lean forward and you can still truck if timing is right, forward to the right brace for a tackle from the left, forward to the left brace for a tackle from the right, push down on the right stick and your RB or WR (used more for WR in my opinion) will arch his back to try to break loose from tackles from behind. i.e. when he is being chased down.

Others have pointed this out, but don't overuse the sprint button, especially on runs between the tackles. Tread slowly, wait for holes to develop and, most importantly, follow your blockers. Don't outrun your blockers. Stay behind the big linemen, and when he engages his man, hit the sprint button and take off.

I love the inside running game in NCAA 11, probably the best I've ever seen in a football game.
