I've had Stephen Garcia bolt for the draft his jr year, it happens, but the devs have said that QBs are the most likely to stay.

Without insulting a particular game or games, QBs leaving doesn't turn out too well in the importing process due to low AWR.

I had a RS sophomore try to leave after one season as a starter...but convinced him stay. Guess its just luck of the draw

Could it be because I bought the coaching seminar or whatever it is?

If so, how do you remove it?

Highly doubt it. I'm pretty sure it's just a random number roll that determines whether they leave, or something to that extent. Stats play a factor in the odds of it, but yeah. They can always stay.

weight plays a factor as well, or at least it did with the ps2 version. a QB had to be 200 lbs minimum, anything less and even with 60 TD's/no picks/70% comp/5,000 yards/Heisman and he'd never come out.

yes. i'd often change the weight of players who if they declared would never make it in Madden (or sometimes keeping them for senior year would push them to 1st round prospect). sometimes i'd change the weight to make them declare. i found this out cos in '08 DeSean Jackson had a monster season but never came out no matter how many times i loaded up the players leaving screen. screwing around i alter this weight from 169 to 180 and he came out.
