It's the offseason and I'm in my final year of my contract. Is there anyway I can resign or quit or switch with another school and keep my career records or do I have to fullfill my contract and change via that way?

I've been offered jobs mid-contract before. But no, there is no option to flat out quit a job. If no one offers you another job during the offseason, you keep going on your current contract.
