Is it possible to sim through first year and THEN select a team to coach?

I'm not sure if you can do that to take over an existing coach or not.

To create a new coach:
Create a temp coach and then sim through the season.
In season 2, go to the coaching screen (I think it's the coach info screen in particualr) and create a new coach. Select that coach to coach the team you want and then delete your temp season 1 coach.
