I like to play chicken and spread the defense out with three and four wides, or even use the RB as a receiver but you need to be able to hit the pass quickly to the right receiver. Usually that is all about reading the defense prior to the snap.
Look for plays with slants and other short, crossing routes. Make sure you have a couple in your audibles, preferably with your favored formations. You can always audible using the Right stick to a Quick pass. Blitzing LBs open big holes across the middle of the defense. Often the little dink pass two yards past the line of scrimmage can turn into a 6-8 yard or more play because the LBs aren't there to cut it down if they are blitzing. It takes a little practice to get the timing down and to learn to read the defense to avoid the INT, but once you get that down you can eat up a blitzing defense most of the time.
Also look for opportunities to go deep using a streak route. Against the right defense, you can just toss the ball up quickly to one of your outside receivers and get a huge gain if the other team is sending 6 or 8 players. Again, it takes practice to recognize the scenario and learn when to just take the sack or hit your hot route if the play doesn't develop very quickly (ie receiver should beat his man within the first two steps).
Finally, screen plays and plays where a RB or FB circles out of the backfield can be good defenses against a blitz, but you need a beat longer to make those work and timing is critical.
Pick various plays in practice mode and set the defense to a blitz play and try the various scenarios out until you can hit them. When you have a couple of favored plays, go back into practice mode and set the defense play to Random, so you can learn what to do when the defense does not blitz.
