If you don't play someone all season will they automatically be given a redshirt for that year?

Yes they will. As long as they don't get any playing time, including special teams.

Yes, if they do not appear on the field in any game, it is an auto redshirt. I try to get everyone on my roster in for my offline dynasty with Army for realism, but I miss a few, and now RS have popped up on my roster a few places.

Actually I'm pretty sure that anyone that doesn't get any stats will redshirt. I'm pretty sure that if you play someone occasionally (like a backup O-lineman) but he doesn't get any stats he'll RS.

Yes, it's all about stats. It WILL be an automatic redshirt if the player doesn't record some kind of stat. Playing time doesn't matter. It should but that's EA for you.
