I have a feeling it's due to the presentation stuff in the game. It looks better for the post-TD graphic to fly in with a guys name than WR #87 and for the Impact Players screen to come in with names rather than LB #58.

Only thing that worries me is that the numbers and not names are used in the pre-game and post-game stats - hopefully that's just a demo thing...
