I'm just curious if I can go out with a school like South Alabama, put an absurd amount of points into a 5 star recruit(s), and land one or two. Anyone know?

I hope not with a basic coach. Now if a coach has amazing recruiting skills maybe a 4 star or two would be acceptable.

No. You can't. If you progress your coach, the schools prestige will rise, but first year there is no way. You can only do 500 points a week while Alabama, for instance can do 700 and with their higher bonuses you can't keep up.

First year at a one star you are pretty much limited to three star recruts
