I LOVE this topic.
For what its worth, I've found a couple of suggestions on this website that drastically improve the realism and quality of sim without too much user input or wonkiness.
1. You can only recruit as many guys as you have spots for. You can NOT over-recruit. YOU CANNOT CUT ANYONE, EVER.
This is a MUST HAVE for any realistic sim. Recruiting gets way too easy without intentionally gimping yourself in ridiculous ways, but this is the most simple way to add a realistic challenge. Really slows down your ascent to a six star program when you're forced to use those three star recruits for all four years. Also, this really cuts down on redshirts (because you actually NEED your players), and it magnifies the impact of busts. If you just hate recruiting in general but also want realism, try letting the CPU do 100% of your recruiting for you.
2. No scouting!
This is a must. If you recruit based on physical specifications like you should, it really won't hurt you as much as you think. Everyone recruits busts and lets them stick around for 4 years. That's football. Enjoy your new fourth string QB.
3. No simming outside of garbage time.
Enhances the last two house rules. Even if your MLB has a 60 OVR, if he's got plenty of speed, acceleration and zone coverage ability, he's still a beast of a nickel backer. Don't depend on the CPU to tell you who to play--play the guys who make your scheme work. If you're a spread option team, get a bunch of 270 lbs offensive linemen with "A" acceleration. If you're a triple-option team, recruit 6'4"+ receivers with great jumping and strength. When you stop scouting, you have to give up simming just to give yourself a fair game (sims are determined based on OVR, which are NOT an accurate reflection of your team's talent).
4. Just starting to do this now: drop everyone's injury rating 50 points.
Only makes rules 1-3 that much more pressing and relevant. But not a necessity (especially if you run the QB a lot, this will just piss you off).
5. Drop the speed threshold.
Otherwise DTs catch up to WRs on go routes and it's just stupid. If you get burnt over and over on defense with a lowered threshold, it's because you need to learn how to call defensive plays. There's a reason why teams don't Engage Eight in real life. Sending five guys is considered a risk. Learn the value of cover-2 and cover-3 shells, and realize that giving up 7 yards on a first down run is better than 80 yards on a first down play action pass. Even though man coverage is better than zone coverage on the whole in NCAA 14, zone still has its place (especially if you like to blitz).
...There are tons of other suggestions I like. But these are the easiest, most elegant I can think of. I put them into action every dynasty (and I've done dozens of dynasties).
