actually i think maybe you should start out as a defensive or offensive coordinator at a 1AA school and just call the offensive or defensive plays and then you could work your way up to a coordinator at a bigger school or a head coach at a smaller school
On 989's NCAA Gamebreaker series on PSone, there was a feature similar to this one (I was a Gamebreaker guy in those days). You had choices like:
a) Head Coach of Idaho with a winning record in first three years as you requirement.
b) Offensive or Defensive Coordinator of a mid-level school like Oklahoma State with total offense or total defense per game as your requirements.
c) Special Teams Coach of a Florida State or Nebraska.
The higher the prestige, the lower tiered job you received. As you performed, you got better job offers; of course, you could still be fired if your offense or defense didn't play up to snuff. If you were better at offense than defense, you would look for the offensive jobs (offensive and defensive assistants were also an option) and visa versa. It really was a great way to play the game; plus, you only got about ten offers. You couldn't just pick wherever you wanted to go; if it wasn't offered at the beginning, you had to perform and try to earn the job offer.
I remember that, it was hot. Knowing EA tho, they'll probaly steal it, supe it up and reintroduce it into NCAA 2005 as some super-new-revolutionay-must buy feature.
