My Top Ones:

Joe Alvares, MLB, 6'3 255, California, USC, 340+ career tackles (45+ TFL) and quite a few interceptions and fumbles forced, 3x First Team All-American and numerous defensive trophies, and won three titles at USC (never lost a game and had number defense in nation all three years). Played two seasons for the Falcons and made the Pro Bowl second year before getting permanently injured (my excuse story because I was bored).

Bart Harrison, HB, 5'8 200, Canada, Rutgers, 6700+ rushing yards (69 TDs) and 2100+ receiving yards (12+ TDs). Freshman All-American, 1x second team and 2x first team all-american, won Doak Walker twice but never Heisman. Lost BCS bowl senior year. Played a season for the Colts, only rushed for 900 some yards.
