Can I build a team and then use it in dynasty without being online or do I have to be online every time I play a game?

Yes.....You can go on teambuilder and build teams. You have to have Xbox Live to upload them into your dynasty

Once I load my team into my dynasty do I have to be online to play it?

No. Once the team is downloaded, you don't need to be online to use them.

I've heard, but haven't confirmed, that you need to be online to use custom logos, though.
