I'd say start with the schools who have fully moved up:
UNC-Charlotte
Appalachian State
Coastal Carolina
Liberty
As far as others, there's so many of them that I'm not sure what to say. You could go with schools who are great lately and are FCS. Such as North Dakota State, James Madison, Eastern Washington, Youngstown State.
Then there's tons of other Division II, Division III, and NAIA schools.
I myself go with schools that matter to me, such as school who are Division I hockey schools and schools that I have personal feelings for (Minnesota schools, Colorado schools, Butler, etc).
