do we get to play the actual games or is it strictly managing/coaching the team? i'm assuming the latter...

i love the Franchise part of football games, so maybe this is worth a try for me.

Yes, you get to play the actual games, but you don't get to control the players. You just call all of the plays and attend to everything else that coaching an NFL game entails...
