I show-blitz and actually blitz the SS regularly. As I've noted before, the game tends to pass-protect to the O-line's left, with both the center and (usually) the pass-pro back checking left first. In a defensive 4-3 scheme, that leaves three rushers (LE, LDT, SS or LOLB) on two blockers (RG, RT). Strong-side blitzes have a very good chance of a tackle-for-loss or sack - I used them to collect 15+ sacks for the LOLB position one year in my franchise.
I don't usually blitz corners in man coverage, because they aren't as good as LBs at blitzing and they're usually much better at covering. I do occasionally use plays that zone-blitz them.
I know at least one occasion where I would use a zone 4-3 CB blitz extensively - against the Texans' zone-blocking run scheme. Ahman Green (in his lesser latter-day form) was kicking my @$$ for close to 150 yards one game when I tried to play man, Tampa-2 zone, whatever, didn't matter. OMG I wished I'd had a CB-blitz play for that game, I can't tell you how many TFLs I'd have generated.
