Did you know you can move different players to different positions.

Say you have 3 left tackles, but only 1 right guard and 2 right tackles.

You can move 1 left tackle to right tackle and your backup right tackle can move to right guard. Do this by going to a player and editing their position.

I moved Xavier Cox from 3-4 left end to 3-4 right end and Cox had 8 sacks 1 coming off a double team against the Vikings left tackle and left guard.

Yes, although you are much more limited here than I would like to be. I feel that there should be the ability to move LBs to safety and visa versa as well as moving between WR and TE and possibly between HB and QB and also CB and WR as these have all been seen in the NFL. Also with them mentioning players that played HB and LB during their draft commentary as well as Oline and Dline I feel that there should be some connections there as well.

You can from the roster edit a player and make his default position anything you want it to be change his # etc.

You can't make it anything you want to be. I think the changes you can make are:
QB->WR
RB->FB->TE
OL->OL
DT->DE->OLB->MLB
CB->S
K->P

yea but generally I prefer moving guys around in my franchise. The only one of those I would really use a lot would be the TE-WR one. One more I forgot was TE-Oline which I would use some as well probably but they really don't have a lot of players that would work well for that change.
