Did my first brisket flat on my Weber Smokey Mountain. It was a delicious meat and beer filled Saturday. Which has made for a very sluggish and hungover Sunday.

Sunday I had the family over and did some hickory smoked chicken using thighs and tenderized breasts. Monday for brunch I did homemade chicken and waffles. Sliced up a thigh, stuck it between two homemade pumpkin waffles, and bathed it in maple syrup. It was delicious.20190902_130610.jpg

My inlaws do a lot of cooking when they're here. They brought home a rib roast and said it was for me to cook. Never made one, turned out real good. Followed this recipe: https://heygrillhey.com/garlic-butter-smoked-prime-rib/

Last night I went to Costco and bought three 18 oz. rib-eye steaks and 10 country pork ribs totaling about seven pounds. I made a steak last night and this morning and plan on making all of the pork ribs tonight, but hot damn I am stuffed. Even if I make them, there's no way that I'm eating any tonight.

I bit off way more than I can chew, heh.

Testing out new recipes for my church's annual chili cookoff at the end of the month. I'm probably the only person thinking about this more than a day in advance, but I like to win...

Cut a chuck roast in half. Seasoned with Killer Hogs AP, The BBQ Rub, and some extra coarse pepper. Smoked for about 5 hours on a Weber Kettle. Threw in a pan at about 170 to catch all the juices starting to drip down. Pulled at 185 then cut into cubes and put in the chili. Was all beef.

I won it last year doing a straight ground meat (beef/homemade smoked pork sausage). It's in Texas so anything with beans aint gonna win. I think what sets me apart is using a couple different higher end chili blends. This stuff so 10x better than any type of chili powder I've gotten from a store.
