Am I missing something here? If the technology exists to generate a realistic player model from a single reference photo for all of the real players in the game, WHY can’t we upload a picture of ourselves and create a realistic character for our coach or RTG player!?

I realize it isn't exactly an apples to apples thing here, but they had the technology to import face scans 10 years ago. I remember uploading my photo to Madden to use as my coach in that.

Likely because they're not generating that face in the game itself. They're using assets outside of it to then create the face in that environment and edit it as necessary to smooth out any issues that crop up, and then link it to a player before importing into the game itself.

So we don't have access to the thousands of dollars of equipment/tech they're using at the studio to make the import process clean.

They've already scanned the stadium, so I highly doubt they will add this in 25.

they can update after release and based them on renders. they have Texas Tech's stadium updates, and it was just recently completed. Pretty sure they didn't scan it after it was completed.

They're updatin g Kansas's entire stadium with a future patch. They got Texas Tech and Vanderbilt's updates that weren't even done in real life. There's no reason to highy doubt it.

LSU also announced a new huge video board today that will be "coming this season". It'd be cool if they got those plans to EA, not a huge deal if not.
