You can't turn it off. If you are trying to make accurate classes then the best thing to do is change what year players are before you start your dynasty.

For Example: Sam Bradford is able to come out because he is a RS sophomore. If you want him to stay you can change his year to true sophomore.

You'll also want to user control as many teams you can so when Tebow and Spikes for example say they want to leave, you can still persuade them to stay. Once you get a player to stay, save it and go to the next player. If he leaves, reload your last save until you get him to stay.
