The difference is your TV. When you watch ANYTHING on a TV capable of 1080p, it's in 1080p. Chances are it's upscaled, unless your watching a blu-ray. When you choose to set your ps3 to 1080p, it upscales that image for you, rather than having the TV do it.
So basically, it depends whether your TV or your PS3 is better at upscaling to 1080p.Eagles Rockets Avalanche Rays

I honestly haven't tried it with 2k before.
1080p on PS3 games generally smooths things out a little, but the sacrifice is some detailed textures tend to blur. I know forcing Uncharted 2 to 1080p automatically makes characters hair blurry, and any time the camera pans it becomes pixellated.
You'll just have to try it to find out, every TV is different. If you can't actually tell the difference, leave it on 720p, it will work your playstation less, and improve your fps.Eagles Rockets Avalanche Rays
