Technically there is no button for user controlled players to jump the snap. But the animation is still in the game and is utilized by AI-controlled DL (both on the user team and CPU team). The problem is that they quickly jump back onsides and there is no way to get an offsides penalty against them when they jump because you can't snap the ball until they get back onsides. Long story short, only DL not controlled by the user have the ability to 'jump the snap'.

Yeah, its not like NCAA where they D actually can jump offsides. Even with False Start at 0 and Offsides at 100 they never jump. They should add the Gamplan feature from NCAA to Madden.
