Two Quick Questions about DB Coverage

Is dime double wideout still in any defensive playbooks? I can't find it.

Also, can I assign double coverage to a particular receiver? I know I can shade and individual press but can't figure out how to assign double coverage.

Dime Double Wide is in the TB defensive PB, I know that much.
