I think i found a wonderful loophole in the game and wanted to share it with you.
Here is what I did:
1) Started a career with the Bears
2) Changed the Offensive playbook to option attack
3) Started the career
4) Quit the career
5) Started a career with the Chiefs (Bears first pre-season opponent)
6) When I got to the first pre-season game the Bears were still using the Option Attack offense
This is huge because there are some playbooks in simulation that just plain suck. Now I can edit every team to have strong to very strong playbooks or change it entirely to an Option based league!
I'd appreciate it if someone else verified this works
