If you want something done right, sometimes you have to do it yourself. I'm not saying mine are perfect but I am happier with these than with any others I have seen.
1. I started with a trial account on GameFly, so I wouldn't have to shell out any money for NCAA 12. Credit ScottK10 for the roster with which I started.
2. I rerated every position to be as much like the top draft prospects at http://www.cbssports.com/nfl/draft/prospectrankings
as I could.
3. I dealt with the issue of having the games completely jumble the rosters, I think it has something to do with if you are simming from the national schedule screen.
4. Fresh after Barkley's press conference he's out, along with Teo. Locks like Luck and Richardson are in and guys I think are going like Jeffrey and Griffin are in as well. I went through about 400+ players who were juniors, redshirt juniors, or redshirt sophomores who aren't supposed to leave early but were trying to anyways. Who likes class? I made all of these players sophomores so they would stay (for the rare player I thought wasn't leaving til 2014, I made him a freshman; overall thought not much thought given beyond 2012). I'm not sure how this will affect future draft classes but I'm mainly worried about 2012. I do think this is better than the alternative suggested by somewhere else to lower all of these players below 79 OVR so they will stay.
5. I finally settled on a roster which is included here. I did save at before the conference championship week and do a few rounds of editing just a handful of player (~15) below 79 so they would stay, but like I said not most of them. You won't see these changes on the roster file.
6. I did aim for an accurate draft class and I think you will agree. The only thing I am disappointed about is RGIII and Kalil are not consistently projected in round one. Other than that I have almost all of the first rounders rated as such.
7. After all was said and done with the ratings I did go back and give a boost to LSU. They did prove such on the field this season. GEAUX TIGERS!!!
I may go back and add the other classes but like I said with making everyone either seniors or sophomores they may not be too great. Hopefully 2012 alone is worth it to make Madden more fun for a few more months. Of course, all comments welcomed.
***UPDATED 12/28****
I'm leaving Gilmore and Landry Jones in ATM. Everyone listed in this thread for dreads has them. Most of the changes suggested by Melanconfan were made. I'm pretty happy with this class. Surprisingly RGIII benefitted going from projected 4th to 1st round by changing his height from 6'2" to 6'3". For those who wanted more years sorry but that takes FOREVER. I think this is a good class.

I would love for you to go through and add the other classes too.
