Are you able to control every team in Franchise Mode, and play any game(s) on the schedule?

No, you cannot. EA doesn't believe in this feature.

I was informed that there is a Season Mode, and its possible it can be done there. So far I havent been able to verify it. The only way im buying this game is if I can play any game(s) within a season schedule from any teams.

You can do it within season mode.
