On custom classes, is it a glitch that every draft prospect's draft analysis is they were True Talent 1st OVR? Doesn't look like I get any "Reach"'s when I use a custom class. Also there doesn't seem to be a way to put any red gems in custom classes. Anyone got any explanation or tips to do this?

In my experience that is true. If you make an edit to the class (even something minor) it should correct and fix the issues after you scout the player(will tell you busy or gem/green red diamonds) . There is also a chance that it might be the way the class is built out, with no gems or busts. But you will see the difference after the class gets an edit. The edit also seemed to fix the issue where the game always tells you you got the 1 overall talent which I think is what you are referring to.
