I was going to say air hockey and paper football in ESPN NFL 2K5, but then I realized that's a sports game...
I don't know if this counts as a sports game, but an old PC game of the mid-1990's called Rocket Jockey has a soccer-like game called "rocket ball," and to this day it is still one of the more entertaining things you can play. That game as a whole was incredibly ahead of its time.

Tiny Toon Adventures: Buster Busts Loose on the SNES is a side-scroller that has a football level. You start on your own 20 yard line and need to score a touchdown to beat the level. Fail on 4th down at any point you lose a life and have to start the level over. I remember playing this game as a kid and was so surprised when I got to this level. Such a cool idea and so much fun that it spawned a full sequel of nothing but sports mini-games.Comment
