So just getting back into Madden, I have madden 21 I see there is competitive and simulation which is best for real true gameplay.

I've stuck with sim play style since its supposed to play more true to ratings. There are a few slider sets though that use competitive play style. I would recommend looking through the slider section to get recommendations and a good set of sliders.
