My guess is the only way to do this is to select the teams that are moving to the 3-4 during franchise and just simulate the games until you play them and select a updated playbook that that uses 3-4 defense. For example if you play with the Denver in Franchise select Cleveland as one of the user teams & before you play them set there playbook to NE then default to computer.
