After selecting the clubs and kits, go to "Game Settings", then click on L1 or R1 (or the bumpers on 360) to switch from "Basic" to "Advanced". After that, scroll down until you see the game speed option. At first I couldn't find it, they hid it pretty damn well. You can also edit other things in these menus, including the camera angles.
