At the beginning of the game and beginning of second half you have all the time you need to quick sub the kick off or return positions and they stay that way the rest of the game. During the game there is barely enough time to look at the quick sub list.
The biggest problem is on kick returns. If you don't have a third string TE on your depth chart your starting QB will be blocking for the return.

In my case my kick returner is also my third string TE (actually he is a big WR). Since he is filling the KR position my starting QB is usually in the third TE spot on returns. Before kick offs I try to remember to put someone else as third string TE. Since I don't like to have starters on special teams I stick my best blocking defensive player in there. Then you have to remember to change the depth chart again after the kick off or else in goal line plays you'll have a defensive player blocking or worse trying to catch a pass.

You can stop time and edit your depth chart by going to super sim and pressing the select button on the ps3.
