Mine does this too. But there is a way you can force it to stay on 1080. You have to go to display settings and uncheck 720 (and 1080i if you have a 1080p tv) and just have the 1080 box checked. You can't check or uncheck the 480 so that'll stay checked. Idk how it looks though so so you might get some jaggies.
