For Franchise games you can modify the settings when you are in the game. Or, you can exist the franchise section, go back to the My Madden area and modify the sliders from there. They will stay resident regardless of whether you change them from the game or in the menu. The only difference is that Special Teams sliders are only available from the My Madden section. Looks like they accidentally got left out from the in game settings screen.
