Hate to say it, but it's pre-2nd patch (which completely destroyed it) Madden 2010. They were all just so bad before that, the improvements made it the best.

However, the best sim engine you can have with a Madden game is Madden 2005 PC + Gommo's Madden Editor (with Spin16s Sim Engine fix). It works on all versions after 05, but it was tuned for '05s problems.
