As far as I know prestige just kind of influences the interest of recruits and what jobs you can accept if you quit at the end of a contract or get fired. Sort of because if you quit you lose a coaching prestige star which I believe is always equal to the school you coach.

Edit: I'm not sure though if you go from say 2* Nevada in a year to 5*Oregon if your coaching prestige jumps too or if it would just raise like Nevada's prestige would after your good year
