You just have to outpoint them and hope your recruit doesn't want to commit before you get the chance. Assuming you're at -1, just keep pumping minutes into them. Use the Recruiting Reports option to see how many minutes the soft-committed school is using, and use more than them. If they're also using 60, see how your school's pitch rating compare. If you're behind on most of them, it might be hard to pass them up without some lucky random rolls or an Advisor Bonus.
I've only done it a couple times, but it can be done.
