Why have this debate if you don't want to get into specifics? What is better about those games?
Well, except for the racing part in GT5, which is realistic. Is there something in TOCA beyond racing cars? If I remember correctly, you don't even purchase cars in TOCA.
Perhaps you should visit the tune shop in GT Mode? Plenty of customization. Not a ton of visual customization, but the cars look good enough already.
As for tracks, could you cite examples? I see little difference between Forza and Gran Turismo's tracks.
Someone please correct me if I'm mistaken, but you speak of 3D crowds. I went to google and searched for a crowd picture, and came upon a forum thread of people talking about Forza's graphics.

Shift is an excellent looking game, no doubt. But I humbly disagree with the above statements.
The above images were taken from races. Details aren't disappearing from cars during races and reappearing when you take photos. The cars in GT 5 look phenomenal.
Also, the last statements makes no sense to me.
