Madden 08. Shows the intensity, heart, and passion of the NFL way better. I also like that you can actually hear the players talking. It makes you feel inside the huddle instead of watching on the sidelines.

Madden 12 seems like it's all a show and it's all about glamour. I'd rather have the heart and passion of the Madden 08 intro.
