I've been playing a lot of older Maddens lately, and I'd say '06 or '08.

What he said. I like '06 because of its engaging franchise mode, with radio, newspaper, RFA etc.

'08 is better gameplay wise in my opinion. I like the player roles, as well as the updated hit stick and highlight stick options. Franchise doesn't have radio, which isn't that big of a deal. But I've found teams in '08 act in strange ways. I've done quite a few simulations, and every year, franchise QB's get released, such as Big Ben.

06 or 08. 08 has roles, but too many elite players hit FA, does not have radio or licensed newspapers. 06 has a worse scouting system and the rosters aren't as updated, plus the highlight stick is just a truck stick.

Check out footballidiot.com's forums - I've got a post up there on how to take the madden 08 PC rosters that those guys are updating for the current season and converting them back to rosters that would be playable in madden on ps2 using an action replay max device. My tutorial is for madden 11 ps2 but i'm sure it would work for 06 and somewhat confident it would work for 05.
